Dry Mix
- all purpose flour (240 g)
- sugar (3 tablespoon)
- baking powder (1 ½ teaspoon)
- baking soda (1 ½ teaspoon)
- kosher salt (1 ¼ teaspoon)
- whisk together dry ingredients in a bowl
Wet Mix -> Dry Mixture
- buttermilk (2 ½ cup)
- egg (2 )
- unsalted butter (3 tablespoon),Melted
- Wisk together buttermilk and egg in measuring container
- melt butter
- Add buttermilk mixture and wisk to combined
- add melted butter and gently mix, clumps of flour is good.
- Heat cast iron on medium high until hot
- reduce to medium low -> add oil
- cook on first side 2-4 mins. dark and a few bubbles. You want slow and crispy edges.
- cook other side 2 minutes.
- you can add pancakes to 325 oven if needed to keep warm.
