Ingredients

Dry Mix

  • all purpose flour (240 g)
  • sugar (3 tablespoon)
  • baking powder (1 ½ teaspoon)
  • baking soda (1 ½ teaspoon)
  • kosher salt (1 ¼ teaspoon)
  1. whisk together dry ingredients in a bowl

Wet Mix -> Dry Mixture

  • buttermilk (2 ½ cup)
  • egg (2 )
  • unsalted butter (3 tablespoon),Melted
  1. Wisk together buttermilk and egg in measuring container
  2. melt butter
  3. Add buttermilk mixture and wisk to combined
  4. add melted butter and gently mix, clumps of flour is good.

Cook pancakes

  • canola oil (2 teaspoon)
  1. Heat cast iron on medium high until hot
  2. reduce to medium low -> add oil
  3. cook on first side 2-4 mins. dark and a few bubbles. You want slow and crispy edges.
  4. cook other side 2 minutes.
  5. you can add pancakes to 325 oven if needed to keep warm.
